Okinawa soba is a beloved traditional noodle dish from Okinawa, Japan.
Despite its name, it’s not made with buckwheat, but with chewy wheat noodles that give it a unique texture.
The broth is a flavorful blend of pork, chicken, or beef stock, combined with rich bonito (katsuobushi) dashi, creating a soup that is both light and deeply savory.
Toppings often include tender braised pork belly (sanmai niku), along with green onions. Whether served at home or on special occasions, Okinawa soba is truly the soul food of Okinawa.

Like a traditional Japanese yatai (food stall), we move from place to place,
bringing hot, handmade bowls of Okinawa soba wherever we go.
